Signature Cocktails: Bellini & Spiked Lemonade

These signature cocktails are so yummy and are so easy to make, I cannot wait for you to try them and tell us what a hit they were at your event!

The Bellini:
This recipe will serve 20 people, I found this great website that allows you to scale the ingredients to the amount of guests you will have

Peach Nectar: 20 oz.                                      

Fresh Lemon Juice-20 tsp.                     

Peach Schnapps-20 oz.

Dry Champagne-60 oz. chilled

Crushed Ice-10 cups

First step is to mix the peach nectar, lemon juice and peach schnapps.  Second is to add the ice, mix everything together and add the champagne.  You can serve this is in a champagne flute or a white wine glass, whatever you prefer.

Spiked Lemonade:

This recipe serves 2o people as well and is so refreshing, it is great for a summer cocktail.

Vodka: 4 cups                                    

Mint Leaves: 1/2 cup

Lemon Juice: 4 cups

Club Soda: 5 cups

Sugar: 1 cup

Heat 1 cup of sugar and 1 cup of water over low heat & stir until the sugar has dissolved.  Stop stirring and increase the heat to medium and let simmer for 2 minutes and then let it cool.

In a large bowl combine sugar syrup with mint leaves (puree or muddle the leaves), stir in vodka and fresh lemon juice.  Add 2/3 of a cup of fine sugar.  It is best to let this sit overnight so the mint leaves have time to soften.  Pour the club soda in right before serving and feel free to add lemon slices into the pitcher to add a touch of pretty.  Serve with ice and lemon wedges.
